Rosewater & Matcha Madeleines




Made these for Iain's Ukulele class.

Recipe from Jamie(Aug/Sep10):
- 2 eggs
- 100g caster sugar
- 100 plain flour
- 125g butter
- lemon zest
- 1tbsp rosewater
- icing sugar

For matcha flavor, just skip lemon zest & rosewater and use 1tbsp matcha power (mixed with 1tbsp water to make paste) instead.

Simple but delicious!

Sweet Red Bean Soup

Very traditional Asian dessert which my husband can't stand at all. :-D


Lemon Drizzle Cake

Made this for a farewell party, lemon drizzle cake with poppy seed and blueberry.
Icing wasn't very successful this time though... need to try again. >_<

Bacon & Spinach Quiche

I love quiche. (So does my husband. :-D)
Very convenient for a lazy wife like me. Ha!
Make one for dinner and have enough leftovers for two lunches.




Crust
200g plain flour
125g cold butter
1 egg
pinch of salt
some milk

Form a dough then refrigerate until ready to use.
Blind bake at 190C/375F for 15mins.
Remove weights and bake at 170C/350F for another 10min.

Filling
4 eggs
300ml cream (double cream, single cream, milk, or mixed)
Anything you like, cooked (I put bacon, spinach, and Gruyere cheese)
Salt & pepper to taste

Pour the filling in the crust, then bake at 170C/350F until golden (20~30 mins).

Blueberry Lime Drizzle Cake

I like this cake a lot! Great for tea.
